About

Kiln is a restaurant and bar led by Chef Mitch Orr. It is the crown of Ace Hotel Sydney, situated 18 stories above Surry Hills. Kiln is rooted in contemporary Australian cuisine and something we’re calling Italian-ish, with nods to Japan and Southeast Asia peppered throughout the menu.

Focused on high-quality regional produce, meats and seafood, Chef Mitch showcases his innovative-yet-unpretentious approach to cooking, taking dishes in novel directions and gleefully destroying the high-low dining dichotomy.

“My most memorable meals come with good people, good music and good moods; Kiln is about recreating that experience nightly. We’re here to buck the status quo and encourage everyone who passes through our doors to get comfortable, have fun and enjoy Kiln the way you want. We deliver the goods, you eat right and do your thing.” —Chef Mitch Orr

Our name pays tribute to the history buried beneath the building — once the site of convict potter Jonathan Leak’s kiln. It’s a place where creativity’s been born from fire for more than two centuries.
